Beef Wellington

Calories - 236, protein - 35g, fat - 22g, carbs - 22g

Ingredients:

600g/1.4lb beef fillet

500g/1lb shortcrust pastry - if frozen, make sure it is defrosted before use

300g/2.5 cups of chicken liver pate

1 egg, beaten

Salt and pepper for seasoning

Method:

Season the beef, wrap in plastic wrap and place in the refrigerator to rest for at least one hour

Preheat the air fryer to 160C/320F

Roll out the shortcrust pastry to an even thickness and brush over the edges with the beaten egg

Take the chicken liver pate and spread over the pastry in an even layer

Take the beef fillet out of the plastic wrap and place in the middle of the coated pastry

Wrap the pastry around the meat

Arrange the wellington inside the air fryer and cook for 35 minutes

Allow to cool slightly before slicing
